Quick Cucumber Salad
- 2 medium cucumbers (Leave the skin on for extra fiber)
- ½ cup vinegar
- ¼ cup extra virgin olive oil
- ½ tsp Adobo seasoning
- ¼ tsp ground black pepper
- 1 Tbsp Italian seasoning
- Rinse cucumbers. Thinly slice cucumbers and place in glass storage container.
- In a small bowl, whisk together vinegar, olive oil, Adodo, pepper and Italian seasoning.
- Pour the vinegar-oil mixture over the cucumbers and mix well.
- Enjoy right away or refrigerate for later.
