Quick Cucumber Salad


  • 2 medium cucumbers (Leave the skin on for extra fiber)
  • ½ cup vinegar
  • ¼ cup extra virgin olive oil
  • ½ tsp Adobo seasoning
  • ¼ tsp ground black pepper
  • 1 Tbsp Italian seasoning


  1. Rinse cucumbers. Thinly slice cucumbers and place in glass storage container.
  2. In a small bowl, whisk together vinegar, olive oil, Adodo, pepper and Italian seasoning.
  3. Pour the vinegar-oil mixture over the cucumbers and mix well.
  4. Enjoy right away or refrigerate for later.
